Sauvignon Blanc

Sauvignon Blanc is usually the first wine varietal that wine drinkers learn to identify in a blind tasting. Aromas of grapefruit,citrus, green melon, gooseberry, passion fruit, freshly mown grass, and bell pepper (sometimes described as "cat pee") are the most commonly uses terms to describe a good sauvignon blanc. The grape is also found in some of the best and most expensive dessert wines of French Sauternes and Barsac.
The best classical renditions of sauvignon blanc can be found in France's, in the Loire Valley (Sancerre and Pouilly-Fume) and Bordeaux. The new world has embraced the varietal as well with exciting versions produced in New Zealand, California (where it is sometimes called fumé blanc), Australia, South Africa, and Chile.
Naturally high in acidity, sauvignon blanc is a great aperitif wine for sipping chilled on the patio during the hot days of summer. It pairs well with light oily foods such as shellfish.
